Just wing it

Sometimes I have to read instructions over and over before my brain can decode the information. Like if I'm baking, I will read just one step of the instructions, then set them down, and as I'm setting them down, I think, "Wait...", then immediately pick them up and read them again. Then I'll set them down, do one thing, like get the butter out, then have to pick them up and read them again.
The idea of "Just wing it" in the kitchen is, for me, laughable.
